Tomato Pie



Tomato Pie doesn't sound like the most appetizing thing you've ever heard of, I'm sure. When I hear the word pie, I automatically think of something sweet that is often served at Thanksgiving. I personally hate pies, so when I first heard about tomato pie I was not impressed. After having my first bite, and many after, I was sold. Try it and see what you think!

First, start with a frozen deep dish pie crust and poke holes with a fork all over. Follow the package instructions. I think it says 400 degrees for 7, or so minutes.

While the pie crust is browning, slice your tomatoes, onions, and basil thinly.

Next, mix together your cup of mayonnaise with your grated cheese and a dash of salt and pepper.

Now, you get to assemble. After the crust has had time to cool, begin your layering process. First, layer the tomatoes. Next, generously sprinkle a layer of onions. Then, sprinkle a of basil. You can add a dash of salt and pepper over it if you wish, but the cheese and mayo make it plenty salty for my taste! Repeat the layering once more. Finally, glop (yes, glop) on the thick mayo/cheese mixture and press it into the pie until the entire top if covered. I try to make sure that they edges are sealed. I don't know why. It's just how I roll.



Finally, bake at 350 degrees for thirty to forty five minutes! ENJOY!

Notes: I've often thought about adding bacon crumbles to the layers or even pimento cheese on top. If you feel so inspired, please let me know how it is! I might get brave and try it one day.


Ingredients
3 tomatoes, sliced (peeled if you prefer)
1 yellow onion, sliced into thin strips
1 bunch of basil, julienned
salt and pepper to taste
1 cup of mayonnaise
1 cup grated medium cheddar cheese (grate it yourself!)
1 deep dish frozen pie crust

Directions
Pierce holes in frozen pie crust. Place on a cookie sheet and bake at 400 degrees for 7-10 minutes. You don't want the crust too brown as it will brown during the cooking time of the pie itself. While the pie is baking, slice onions, tomatoes, and basil. Also mix mayo, cheese, and salt/pepper together in a separate bowl. Begin assembly line by placing tomatoes in a cooled pie shell. Next, place onions and basil on top. Repeat layer once. Top vegetables with mayo/cheese mixture. Bake on a cookie sheet for 30-45 minutes. Let cool ten minutes before serving. Enjoy!
